Zucchine alla molisana

Ingredients

  • 800 g medium courgettes
  • 10 tbsp extra virgin olive oil
  • 7 tbsp white wine vinegar
  • 1 clove garlic
  • Sprig of mint
  • Chilli pepper to taste
  • salt to taste
  • oil for frying

Preparation

    Thinly slice the washed courgettes lengthwise and fry in plenty of oil.

    Lay them out on paper towels and, in the meantime, chop together the mint, garlic and chilli pepper.
  3. 3
    Marinate the courgettes for at least three hours with this mixture, the vinegar and oil.
